For the Garlic Butter Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon lemon juice

For the Garlic Bread:

  • 4 slices thick-cut bread (sourdough or white bread works great)
  • 3 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon salt

For the Grilled Cheese:

  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil (for grilling)

Instructions

Step 1: Prepare the Garlic Butter Shrimp

  1. In a large skillet, melt butter over medium heat.
  2. Add garlic and cook for 1 minute, until fragrant.
  3. Stir in shrimp, paprika, salt, pepper, and red pepper flakes.
  4. Cook the shrimp for about 2-3 minutes per side until they turn pink and are cooked through.
  5. Remove from heat and squeeze lemon juice over the shrimp. Set aside.

Step 2: Make the Garlic Bread

  1. In a small bowl, mix together softened butter, garlic, parsley, and salt until smooth.
  2. Spread the garlic butter mixture evenly onto one side of each slice of bread.

Step 3: Assemble the Sandwiches

  1. Heat olive oil in a large skillet over medium heat.
  2. Place the slices of bread butter side down in the skillet, cooking until the bread is golden and crispy (about 2-3 minutes per side).
  3. Once one side of the bread is toasted, flip it over.
  4. On the toasted side, sprinkle half of the shredded mozzarella and cheddar cheese.
  5. Add a few shrimp onto the cheese, and then top with the remaining cheese.
  6. Place the second slice of garlic buttered bread on top, buttered side up, and press gently.

Step 4: Grill the Cheese

  1. Continue grilling the sandwich for 3-4 minutes per side until the cheese is melted and the bread is golden and crispy.
  2. Remove from the skillet and let it cool for a minute before slicing.

Step 5: Serve & Enjoy!

  1. Slice the sandwich in half and serve with a side of crispy fries or a green salad.

Notes

Use Thick-Cut Bread – The thicker the bread, the better the crunch and the more cheese it can hold.
Cook Shrimp Just Right – Don’t overcook the shrimp to avoid rubbery texture.
Cheese Combo – Mozzarella gives you meltiness, while cheddar adds sharp flavor.
Go Low & Slow – When grilling, keep the heat medium-low to avoid burning the bread while ensuring the cheese melts thoroughly.
