- 6 oz Chow Mein Noodles
- 2 boneless skinless chicken breasts, sliced
- 2 tbsp vegetable oil
- 2 celery stalks, sliced
- 2 cups green cabbage, thinly sliced
- ½ cup carrots, matchstick-cut
- 3 green onions, chopped (divided)
- 2 tsp minced ginger
- 3 tsp minced garlic
- ¼ cup low sodium soy sauce
- 1½ tbsp oyster sauce
- ½ tbsp granulated sugar
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Prepare all vegetables and season the sliced chicken with salt and pepper.
- Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat. Cook seasoned chicken until browned, then set aside on a paper towel-lined plate.
- Cook chow mein noodles according to package instructions; drain and set aside.
- In the same pan, add another tbsp of oil and stir-fry celery and carrots for 2–3 minutes. Add green cabbage and half of the chopped green onions; cook until tender yet crunchy (about 3–4 minutes).
- In a bowl, mix ginger, garlic, soy sauce, oyster sauce, sugar, and sesame oil.
- Return chicken and drained noodles to the pan; pour sauce over everything. Toss until well combined and heated through. Garnish with remaining green onions before serving.
