  • 6 oz Chow Mein Noodles
  • 2 boneless skinless chicken breasts, sliced
  • 2 tbsp vegetable oil
  • 2 celery stalks, sliced
  • 2 cups green cabbage, thinly sliced
  • ½ cup carrots, matchstick-cut
  • 3 green onions, chopped (divided)
  • 2 tsp minced ginger
  • 3 tsp minced garlic
  • ¼ cup low sodium soy sauce
  • 1½ tbsp oyster sauce
  • ½ tbsp granulated sugar
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables and season the sliced chicken with salt and pepper.
  2. Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat. Cook seasoned chicken until browned, then set aside on a paper towel-lined plate.
  3. Cook chow mein noodles according to package instructions; drain and set aside.
  4. In the same pan, add another tbsp of oil and stir-fry celery and carrots for 2–3 minutes. Add green cabbage and half of the chopped green onions; cook until tender yet crunchy (about 3–4 minutes).
  5. In a bowl, mix ginger, garlic, soy sauce, oyster sauce, sugar, and sesame oil.
  6. Return chicken and drained noodles to the pan; pour sauce over everything. Toss until well combined and heated through. Garnish with remaining green onions before serving.
