- 1 small onion (sliced into strips)
- 1 packet of fajita seasoning
- ¼ cup water
- 8.5-ounce package of prepared cilantro and lime rice
- ⅓ cup sour cream
- 1½ cups shredded Monterey Jack cheese
- 7–8 large burrito-sized tortillas
Instructions
- Heat the cooking oil in a large skillet over medium-high heat.
- Add the chicken strips and cook for about 3 minutes until golden brown and no longer pink.
- Stir in sliced peppers and onion; cook for an additional 3 to 5 minutes until softened.
- Pour in water along with fajita seasoning; stir to coat evenly and cook until tender.
- Prepare rice as per package instructions; mix cooked rice with sour cream in a bowl.
- Lay out tortillas on a clean surface. For each tortilla, place ¼ cup rice mixture, top with ½ cup chicken mixture, and sprinkle with ¼ cup cheese.
