Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • ½ cup all-purpose flour (for dredging)

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 8 oz fresh mushrooms, sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream

  • ½ cup chicken broth

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • Salt and black pepper to taste

  • 1½ cups shredded mozzarella cheese (or Swiss cheese for a traditional touch)

  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

Step 1: Prepare the Chicken

  1. Preheat your oven to 350°F (175°C).

  2. Season the chicken breasts with salt, pepper, and paprika.

  3. Lightly dredge each piece in flour, shaking off any excess.

Step 2: Brown the Chicken

  1. In a large skillet, heat olive oil and butter over medium heat.

  2. Sear the chicken breasts for 2-3 minutes per side until golden brown.

  3. Transfer the browned chicken to a greased 9×13 inch baking dish.

Step 3: Sauté the Mushrooms

  1. In the same skillet, add the sliced mushrooms.

  2. Cook for about 4-5 minutes until tender and browned.

  3. Scatter the cooked mushrooms over the chicken in the baking dish.

Step 4: Make the Creamy Sauce

  1. In a bowl, mix together the cream of mushroom soup, sour cream, chicken broth, garlic powder, and onion powder.

  2. Stir until smooth and combined.

Step 5: Assemble and Bake

  1. Pour the creamy sauce evenly over the chicken and mushrooms.

  2. Sprinkle the shredded mozzarella (or Swiss) cheese generously over the top.

  3. Bake uncovered for 30-35 minutes, or until the chicken is cooked through and the sauce is bubbly.

Step 6: Garnish and Serve

  1. Let the dish cool for 5 minutes.

  2. Garnish with chopped fresh parsley for a pop of color before serving.

Notes

Dredge Lightly – A thin flour coating adds body without making the dish heavy.
Brown the Chicken – Adds flavor and locks in moisture.
Use Fresh Mushrooms – They add a savory, earthy note that canned mushrooms can’t match.
Cheese Choice – Mozzarella melts beautifully; Swiss cheese adds a nutty richness.
Don’t Overcook – Use a meat thermometer and cook chicken to 165°F for perfect juiciness.
