  • 6 Tbsp Unsalted Butter
  • 1 Cup Onion, chopped
  • 2 Carrots, chopped
  • 2 Celery sticks, chopped
  • 3 Garlic cloves, minced
  • 1/3 Cup Flour
  • 5 Cups Chicken Stock
  • 3/4 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1 lb Yukon Gold potatoes, peeled and sliced into 1/4” thick pieces
  • 4 Cups Cooked Chicken (shredded)
  • 1 Cup Frozen Peas
  • 1 Cup Corn
  • 1/2 Cup Half-and-Half Cream
  • 1 Bay Leaf
  • 1/4 Cup Parsley, finely chopped

Instructions

  1. In a large stock pot or Dutch oven, melt the butter over medium heat. Add the chopped onion, celery, and carrots; sauté for about 4–5 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds.
  2. Sprinkle in the flour and stir to combine with the vegetables; continue cooking for another minute until lightly golden.
  3. Gradually whisk in the chicken stock while breaking up any lumps. Season with sea salt, black pepper, and add the bay leaf.
  4. Incorporate the sliced Yukon Gold potatoes into the pot and simmer for about 10–12 minutes until tender.
  5. Mix in the frozen peas and corn; bring back to a gentle simmer before adding half-and-half cream followed by shredded chicken.
  6. Cook for an additional 10 minutes until everything is heated through and well combined.
  7. Serve hot, garnished with fresh parsley.
