  • 2 lbs ground chicken
  • 1 large egg
  • 3/4 cup breadcrumbs
  • 1/2 cup ricotta cheese
  • 2 cups chopped spinach
  • 5 tbsp unsalted butter
  • 1 3/4 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, egg, breadcrumbs, ricotta cheese, garlic powder, Italian seasoning, sweet paprika, minced onion, salt, and pepper.
  3. Mix well until combined and form into golf-ball-sized meatballs.
  4. Place meatballs on a parchment-lined baking tray and bake for 25-30 minutes until golden brown and cooked through.
  5. Meanwhile, in a large skillet, melt butter over medium heat and sauté minced garlic for one minute.
  6. Add milk and cream to the skillet; thicken the sauce with either an egg yolk or flour as desired.
  7. Stir in chopped spinach and cook until tender, then mix in Parmesan cheese.
