- 1 lb boneless, skinless chicken breast (cut into 1-inch cubes)
- 2 cups broccoli florets
- 1/2 yellow bell pepper (cut into 1-inch pieces)
- 1/2 red bell pepper (cut into 1-inch pieces)
- 1/2 cup baby carrots (sliced)
- 1/4 cup low sodium chicken broth
- 3 tbsp low sodium soy sauce
- 1/4 cup honey
- 1 tbsp toasted sesame oil
- Olive oil, ginger, garlic, corn starch, crushed red pepper flakes for flavor
Instructions
- Season cubed chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a wok or large skillet over medium-high heat. Cook the chicken until browned, about 5-6 minutes. Set aside.
- In the same pan, add another tablespoon of olive oil. Stir-fry broccoli, yellow bell pepper, red bell pepper, and baby carrots for about 3-4 minutes until tender yet crisp.
