Ingredients
- 6 medium chicken thighs
- Salt and pepper (to taste)

- 2 small bay leaves
- 1 can chickpeas (rinsed and drained)
- Dried apricots

Instructions
- Trim excess fat from chicken thighs and season with salt and pepper.
- In a large skillet or Dutch oven, heat olive oil over medium heat and brown the chicken thighs on both sides. Remove and set aside.
