  • 10 oz Red Gold Diced Tomatoes & Green Chilies
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese (room temperature)
  • 8 tortillas (flour or corn)
  • ½ cup vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine shredded chicken, cheddar cheese, diced tomatoes with chilies, garlic powder, onion powder, kosher salt, black pepper, and cream cheese until well mixed.
  2. Spoon about 1/4 cup of the mixture onto each tortilla and roll them tightly to form taquitos.
  3. Heat vegetable oil in a large skillet over medium-low heat. Once hot, add the taquitos carefully and fry until golden brown and crispy on both sides (about 3-4 minutes per side).
  4. Remove from the skillet and drain on paper towels before serving.
