Ingredients
For the Chicken:

1 lb boneless, skinless chicken thighs or breasts, thinly sliced

1 tbsp cornstarch

½ tsp salt

½ tsp black pepper

1 tbsp vegetable oil
For the Teriyaki Sauce:

⅓ cup low-sodium soy sauce
-
2 tbsp honey
-
2 tbsp brown sugar
-
2 tbsp rice vinegar
-
1 tbsp sesame oil
-
2 cloves garlic, minced
-
1 tsp fresh ginger, grated

2 tsp cornstarch mixed with 2 tbsp water (slurry)
For the Noodles & Veggies:

8 oz noodles (lo mein, spaghetti, or rice noodles)

1 red bell pepper, thinly sliced

1 cup shredded carrots
-
1 cup broccoli florets
-
2 green onions, sliced
-
1 tbsp sesame seeds (optional, for garnish)
Instructions
Step 1: Cook the Noodles

Bring a pot of salted water to a boil.

Cook noodles according to package instructions.

Drain and set aside.
Step 2: Make the Teriyaki Sauce
4. In a bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
5. Set aside the cornstarch slurry to thicken the sauce later.
Step 3: Cook the Chicken
6. Toss chicken slices with cornstarch, salt, and pepper.
7. Heat oil in a large skillet over medium-high heat.
8. Add chicken and stir-fry until browned and cooked through (about 5-7 minutes).
9. Remove chicken from pan and set aside.
Step 4: Stir-Fry the Veggies
10. In the same pan, add a little more oil if needed.
11. Sauté bell pepper, carrots, and broccoli until crisp-tender, about 3-5 minutes.
Step 5: Combine Everything
12. Return chicken to the pan with veggies.
13. Pour in the teriyaki sauce and bring to a simmer.
14. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
15. Add cooked noodles and toss to coat everything evenly.
Step 6: Garnish & Serve
16. Sprinkle with green onions and sesame seeds.
17. Serve hot and enjoy!
