  • 12 oz Chicken breast (or thigh)
  • ½ Sweet onion (sliced)
  • 1 Bell pepper (sliced)
  • ½ cup Green peas
  • 2 tbsp Vegetable oil
  • 1 tbsp Garlic (chopped)
  • 1 tbsp Soy sauce
  • 1½ cup Chicken stock (low sodium)
  • ¼ tsp White pepper
  • 1 tbsp Curry powder (use any curry powder mild/hot)
  • 1 tsp Chinese five spices powder
  • ½ tsp Turmeric powder
  • ½ tsp Chilli powder (or paprika powder)
  • ½ tsp Salt (adjust salt according to taste)
  • 1 tsp Sugar
  • 1 tsp Corn Starch
  • 1 tbsp Plain Flour

Instructions

  1. Cut chicken into thin slices; season with soy sauce and white pepper.
  2. Slice onion and bell pepper; chop garlic.
  3. In a pot, combine chicken stock, spices, corn starch, flour, salt, and sugar; whisk until smooth.
  4. Cook the sauce over medium-low heat until it thickens; keep warm.
  5. In a skillet, heat oil; stir-fry the seasoned chicken until cooked through.
  6. Add garlic, onion, bell pepper, and green peas; cook for an additional 1-2 minutes.
  7. Pour in the curry sauce; stir well and cook for another minute.
  8. Adjust seasoning as needed before serving.
