For the Grilled Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • Juice of 1 lime

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing

  • 12 chipotle peppers in adobo sauce (adjust to taste)

  • 1 tsp lime juice

  • 1 garlic clove

  • Pinch of salt

For the Burrito Filling:

  • 4 large flour tortillas (burrito size)

  • 1 cup cooked white or brown rice

  • 1 cup canned black beans, drained and rinsed

  • ½ cup shredded cheddar or Monterey Jack cheese

  • ½ cup chopped romaine or iceberg lettuce

  • ¼ cup chopped tomatoes or salsa

  • ¼ cup sliced red onion (optional)

  • ¼ cup chopped cilantro (optional)


Instructions

Step 1: Marinate the Chicken
In a bowl, mix olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice.
Add the chicken and toss to coat evenly.
Let marinate for at least 30 minutes (or up to 2 hours for deeper flavor).

Step 2: Make the Chipotle Ranch Sauce
In a blender or food processor, combine ranch dressing, chipotle peppers, lime juice, garlic, and a pinch of salt.
Blend until smooth.
Refrigerate until ready to use.

Step 3: Grill the Chicken
Preheat grill or grill pan to medium-high heat.
Grill chicken for 5–7 minutes per side or until fully cooked and nicely charred.
Let rest for 5 minutes, then slice into strips.

Step 4: Assemble the Burritos
Warm tortillas in a dry skillet or microwave for 15 seconds.
Spread 1–2 tablespoons of chipotle ranch sauce in the center of each tortilla.
Layer with rice, beans, grilled chicken, cheese, lettuce, tomatoes, onion, and cilantro.
Drizzle with more chipotle ranch sauce if desired.

 

Step 5: Fold and Grill the Burritos (Optional)
Fold in the sides, then roll up the tortilla tightly from the bottom.
For a crispy finish, place the burritos seam-side down on a heated skillet and cook for 1–2 minutes per side until golden and sealed.

Use Fresh Ingredients – Crisp lettuce and juicy tomatoes add a fresh contrast.
