Instructions

Step 1: Toast the Bread

  1. Preheat the oven to 375°F (190°C).

  2. Arrange baguette slices on a baking sheet.

  3. Lightly brush each slice with olive oil.

  4. Toast in the oven for 7-8 minutes, flipping halfway, until golden and crisp. Remove and let cool.

Step 2: Prepare the Strawberry Topping

  1. In a mixing bowl, combine chopped strawberries, honey (if using), vanilla extract, and lemon juice.

  2. Mix gently and set aside to marinate while preparing the chocolate.

Step 3: Melt the Chocolate

  1. Place chocolate chips and coconut oil in a microwave-safe bowl.

  2. Microwave in 20-second intervals, stirring between each, until smooth and fully melted.

  3. Alternatively, melt over low heat on the stove using a double boiler.

Step 4: Assemble the Bruschetta

  1. Spread a generous layer of melted chocolate over each toasted bread slice.

  2. Top with a spoonful of the strawberry mixture.

  3. Add a small mint leaf or a sprinkle of chocolate shavings if desired.

Step 5: Serve Immediately
