Ingredients
For the Cookies:

- 1 teaspoon baking soda – For a little lift.
- 1/2 teaspoon salt – To balance the sweetness.
- 1 cup unsalted butter – Softened, for a rich flavor.
- 1 cup granulated sugar – For sweetness.
- 1 large egg – Helps bind the dough.
- 2 teaspoons vanilla extract – For flavor.
- 1/4 cup sour cream – Adds tenderness to the cookies.
For the Cinnamon Sugar Swirl:
- 1/4 cup granulated sugar – To sweeten the cinnamon filling.
- 1 tablespoon ground cinnamon – The star of the show!
- 2 tablespoons unsalted butter – Melted, to bind the swirl together.
For the Glaze:
- 1 cup powdered sugar – For the sweet glaze.
- 2 tablespoons milk – To thin the glaze to the right consistency.
- ½ teaspoon vanilla extract – For a little extra flavor.
Instructions
Step 1: Prepare the Cookie Dough
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
Add the egg, vanilla extract, and sour cream to the butter mixture and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
Step 2: Make the Cinnamon Sugar Swirl
In a small bowl, combine the granulated sugar and ground cinnamon. Add the melted butter and stir until the mixture is smooth and combined.
Roll out the cookie dough on a lightly floured surface into a rectangle, about ¼-inch thick.
Spread the cinnamon sugar mixture evenly over the dough.
Step 3: Roll and Slice
Carefully roll the dough into a log (like a cinnamon roll). Once rolled, slice the dough into ½-inch thick rounds and place them on a baking sheet lined with parchment paper, spaced about 2 inches apart.
Step 4: Bake the Cookies
Preheat the oven to 350°F (175°C).
Bake the cookies for 10-12 minutes, or until the edges are golden brown. Be careful not to overbake them—keep them soft and chewy.
Step 5: Make the Glaze
While the cookies are cooling, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add more milk if necessary to reach your desired consistency for drizzling.
Step 6: Drizzle the Glaze
Once the cookies have cooled slightly, drizzle the glaze over the top of each cookie. Let the glaze set for a few minutes before serving.
Notes
- Chill the Dough: If the dough is too soft to work with, chill it in the refrigerator for 30 minutes to make it easier to roll and slice.
- Use Room Temperature Butter: Softened butter will help the dough mix more easily and evenly.
- Customize the Filling: Add chopped pecans, walnuts, or raisins to the cinnamon sugar filling for added texture and flavor.
- Don’t Overbake: These cookies should be soft and chewy, so remove them from the oven as soon as the edges are golden brown.
