  • 3/4 cup all-purpose flour

  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini loaf pans with parchment paper.
  2. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla extract until smooth.
  3. In another bowl, sift together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
