Ingredients

Scale
  • 2 cups all-purpose flour – The base for these light muffins.
  • 1 tablespoon baking powder – To make the muffins rise beautifully.
  • ½ teaspoon baking soda – Helps create a soft, fluffy texture.
  • ½ teaspoon salt – Enhances the sweet citrus flavor.
  • ½ cup sugar – For a touch of sweetness.
  • 1 large egg – Helps bind the ingredients.
  • ¾ cup buttermilk – Adds moisture and a slight tang.
  • ½ cup unsalted butter, melted – Makes the muffins rich and moist.
  • 1 teaspoon vanilla extract – Adds a warm depth of flavor.
  • ¼ cup fresh orange juice – The base of the citrus flavor.
  • Zest of 1 large orange – For an extra burst of orange flavor.

For the Glaze:

  • ½ cup powdered sugar – For sweetness and to form the glaze.
  • 2 tablespoons fresh orange juice – For a zesty finish to the glaze.

Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with butter.

Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

Step 3: Mix the Wet Ingredients
In a separate bowl, whisk together the egg, melted butter, buttermilk, orange juice, vanilla extract, and orange zest.

Step 4: Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Step 5: Portion the Muffins
Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.

Step 6: Bake
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be lightly golden on top.

Step 7: Make the Glaze
While the muffins are baking, whisk together the powdered sugar and orange juice in a small bowl until smooth. Once the muffins have cooled slightly, drizzle the glaze over each muffin.

Notes

Use Fresh Orange Juice & Zest – Freshly squeezed orange juice and zest give these muffins the best flavor.
Don’t Overmix – Stir just until combined to keep the muffins light and fluffy.
Check for Doneness – Test with a toothpick; it should come out clean when the muffins are done.
