Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then mix in cream of coconut, buttermilk, and coconut extract.
