  • 2 pounds salmon fillets (cut into pieces)

Instructions

  1. Prepare the salsa by combining mango, pineapple, red onion, jalapeño, and sweet pepper in a food processor. Pulse until finely chopped. Stir in lime juice and cilantro. Chill for at least four hours.
  2. Preheat your oven to 375°F (190°C).
  3. In a bowl, mix coconut flour, shredded coconut, and sea salt.
  4. Dip each salmon piece in beaten eggs, then roll in the coconut mixture until fully coated.
