1 avocado, diced
-
½ cup red onion, finely diced
-
¼ cup fresh cilantro, chopped
-
½ jalapeño, finely diced (optional, for a little heat)
For the Easy Lime Vinaigrette:

3 tbsp olive oil
-
2 tbsp fresh lime juice (about 1 lime)
-
1 tsp honey or maple syrup
-
½ tsp Dijon mustard
-
½ tsp garlic powder
-
Salt and black pepper to taste
Optional Add-ins:
-
½ cup crumbled feta cheese
-
1 cup diced cucumber
-
Black beans for added protein
-
Extra lime wedges for serving
Instructions
Step 1: Prepare the Corn
If using fresh corn, boil or grill the corn until tender, then slice off the kernels.
If using frozen corn, thaw and pat dry.
Step 2: Make the Vinaigrette
In a small bowl or jar, whisk together olive oil, lime juice, honey, Dijon mustard, garlic powder, salt, and pepper until well combined.
Step 3: Assemble the Salad
In a large mixing bowl, combine corn, cherry tomatoes, avocado, red onion, cilantro, and jalapeño (if using).
Drizzle the vinaigrette over the salad and toss gently to coat everything evenly.
Step 4: Serve
Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
Serve immediately or refrigerate for 30 minutes to let the flavors meld.
Notes
Use Fresh Corn – Grilled corn adds a smoky flavor, but boiled or frozen works too.
Dice Ingredients Evenly – For the best texture and easy scooping.
Add Avocado Last – To prevent browning if making ahead.
Taste & Adjust – Lime juice and salt levels can be tweaked to your preference.
Serve Chilled – Refreshing and perfect for hot days!
