Ingredients

  • 1 ½ cups cottage cheese (full-fat or low-fat)

  • 1 large cucumber, diced (peeled or unpeeled)

  • 2 green onions, finely chopped

  • 1 tbsp fresh dill or parsley, chopped

  • 1 tbsp lemon juice (or white vinegar)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp garlic powder (optional)

  • A drizzle of olive oil (optional)


Instructions

Step 1: Prep the Ingredients
Wash and dice the cucumber into small, bite-sized pieces.
Chop green onions and fresh herbs.

Step 2: Mix the Salad
In a mixing bowl, combine cottage cheese, cucumber, green onions, herbs, lemon juice, salt, and pepper.
Add garlic powder and a drizzle of olive oil if using.
Stir gently until well combined.

 

Step 3: Chill and Serve
For best flavor, chill in the fridge for 15–30 minutes before serving.
Serve in individual bowls or on a bed of greens.

Notes

Use Crisp Cucumbers – Persian or English cucumbers are great for texture.
Drain Excess Water – Pat cucumber dry for a less watery salad.
Try Different Herbs – Mint, chives, or basil add a lovely twist.
Spice It Up – Add red pepper flakes or a dash of hot sauce for heat.
