Ingredients

Dry Ingredients:
2 ¼ cups all-purpose flour
1 cup whole wheat flour
1 tbsp sugar
1 ½ tsp salt
1 packet (2 ¼ tsp) instant yeast

Wet Ingredients:
1 cup cottage cheese (room temperature)
½ cup warm milk (not hot, about 110°F)
¼ cup vegetable oil or melted butter
2 eggs (room temperature)
1 tbsp honey (optional for subtle sweetness)

Topping (Optional):
1 tbsp sesame seeds or rolled oats (for garnish)
1 egg yolk + 1 tbsp milk (egg wash for golden crust)


Instructions

Step 1: Activate the Yeast
In a small bowl, combine warm milk and sugar. Sprinkle the instant yeast over the top.
Let it sit for 5-7 minutes until foamy and bubbly. This confirms the yeast is active.

Step 2: Mix Wet Ingredients
In a large mixing bowl, combine the cottage cheese, eggs, oil, and honey.
Whisk until smooth and well blended.
Add in the activated yeast mixture and stir gently to combine.

Step 3: Combine Dry and Wet Mixtures
In the same bowl (or a stand mixer), mix in the all-purpose flour, whole wheat flour, and salt.
Stir with a wooden spoon until a shaggy dough forms, then knead for 8-10 minutes by hand (or 5 minutes in a mixer with dough hook) until the dough is smooth and slightly tacky.

Step 4: First Rise
Place the dough in a greased bowl and cover with a clean towel or plastic wrap.
Let it rise in a warm place for 1 hour, or until it doubles in size.

Step 5: Shape and Second Rise
Punch down the dough to release air.
Turn it out onto a lightly floured surface and shape into a loaf.
Place the dough in a greased 9×5-inch loaf pan.
Cover and let it rise again for 30-40 minutes, until it rises just above the edge of the pan.

Step 6: Add Topping (Optional)
Preheat the oven to 350°F (175°C).
Brush the top of the loaf with egg wash and sprinkle sesame seeds or oats on top.

Step 7: Bake the Bread
Bake for 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
An instant-read thermometer inserted into the center should read about 190°F.

Step 8: Cool and Serve
Remove the loaf from the oven and let it cool in the pan for 10 minutes.
Then transfer to a wire rack to cool completely before slicing.

Use Full-Fat Cottage Cheese – For richer texture and better moisture.
