  • ¼ tsp baking powder

  • ¼ tsp salt

  • Olive oil spray (for the pan)

Instructions

Step 1: Blend the Ingredients

  1. Preheat your oven to 375°F (190°C) or preheat a skillet if making on the stove.

  2. In a blender or food processor, add cottage cheese, eggs, almond flour, baking powder, salt, and optional seasonings.

  3. Blend until smooth and creamy.

Step 2: Bake the Flatbread (Oven Method)

  1. Line a baking sheet with parchment paper and lightly spray with olive oil.

  2. Pour the blended batter into the center and spread into an even circle or rectangle, about ¼-inch thick.

  3. Bake for 18–20 minutes or until the top is set and edges are golden.

  4. Let it cool slightly, then gently peel it off the parchment.

Step 3: Cook on the Stove (Skillet Method)

  1. Heat a nonstick skillet over medium heat and lightly grease it.

  2. Pour half the batter to form a flatbread circle.

  3. Cook 2–3 minutes per side, until golden and firm. Repeat with the remaining batter.

Step 4: Serve or Store

  1. Slice into wedges or use whole as a wrap.

  2. Serve warm or room temp with your favorite toppings.

Notes

Use Full-Fat Cottage Cheese – For the creamiest texture and best flavor.
Don’t Skip the Blend – Ensures the batter is smooth and cohesive.
