Ingredients
- 1 cup pumpkin purée
- 2 large eggs
- ½ cup cottage cheese
- ¼ cup Greek yogurt (plain)
- ¼ cup maple syrup
- 2 tsp vanilla bean paste
- 1 ½ cups old fashioned oats
- 1 ½ tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup mini white chocolate chips
Instructions
- Preheat your oven to 350°F and prepare a muffin tin with liners.
- In a blender, combine all ingredients except the mini white chocolate chips and blend until smooth.
- Gently fold in the mini white chocolate chips.
- Fill each muffin cup three-quarters full with batter and top with extra chocolate chips if desired.
- Bake for 26 to 28 minutes or until a toothpick comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack.
