  • 4 baking potatoes
  • 1 pound lean ground beef
  • ½ cup chopped onion
  • 1 garlic clove, minced
  • ¾ cup tomato paste
  • ¼ cup Worcestershire sauce
  • 1 ½ cups beef broth
  • 2 cups frozen mixed vegetables (thawed)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F. Bake the potatoes for about one hour until tender, or microwave on high for about 10 minutes.
  2. While the potatoes bake, heat a skillet over medium heat. Brown the ground beef with chopped onion and minced garlic; season with salt and pepper.
  3. Once browned, stir in tomato paste, Worcestershire sauce, and beef broth until combined.
  4. Add thawed mixed vegetables to the skillet mixture and simmer until slightly thickened; adjust seasoning as desired.
  5. Remove baked potatoes from the oven and cut an 'x' into each one, gently squeezing to open them.
  6. Spoon the beef mixture generously into each potato and top with shredded cheddar cheese.
  7. Return to the oven for about 5 minutes or broil for 2–3 minutes until cheese is melted.
