- 4 baking potatoes
- 1 pound lean ground beef
- ½ cup chopped onion
- 1 garlic clove, minced
- ¾ cup tomato paste
- ¼ cup Worcestershire sauce
- 1 ½ cups beef broth
- 2 cups frozen mixed vegetables (thawed)
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F. Bake the potatoes for about one hour until tender, or microwave on high for about 10 minutes.
- While the potatoes bake, heat a skillet over medium heat. Brown the ground beef with chopped onion and minced garlic; season with salt and pepper.
- Once browned, stir in tomato paste, Worcestershire sauce, and beef broth until combined.
- Add thawed mixed vegetables to the skillet mixture and simmer until slightly thickened; adjust seasoning as desired.
- Remove baked potatoes from the oven and cut an 'x' into each one, gently squeezing to open them.
