Ingredients
For the Skillet:
2 tbsp olive oil or butter
3 cups diced potatoes (Yukon gold or red potatoes work best)
½ lb beef sausage, sliced or crumbled
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
½ tsp garlic powder
½ tsp paprika
Salt and pepper to taste
4 large eggs
1 cup shredded cheddar cheese
2 tbsp chopped fresh parsley or chives (optional for garnish)
Optional Add-Ins:
1 cup mushrooms, sliced
½ cup diced tomatoes
Spinach or kale
Hot sauce or salsa for serving
Instructions
Step 1: Cook the Potatoes
Heat oil in a large skillet over medium heat.
Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden brown and tender.
Season with salt, pepper, paprika, and garlic powder.
Step 2: Add the Sausage and Veggies
Add beef sausage to the skillet and cook until browned (about 5 minutes).
Add diced onions and bell peppers. Cook for another 4–5 minutes, until vegetables are tender.
Step 3: Make Wells and Add Eggs
Reduce heat to medium-low. Make four small wells in the mixture and crack one egg into each.
Cover the skillet with a lid or foil and cook for 5–7 minutes, or until eggs are set to your liking.
Step 4: Add Cheese and Finish
Sprinkle shredded cheddar cheese over the top.
Cover again for 1–2 minutes to melt the cheese.
Remove from heat and garnish with fresh parsley or chives.
Step 5: Serve Hot
Serve directly from the skillet or portion onto plates.
Add hot sauce or salsa for an extra kick if desired.
