  • 2 lb chicken tenderloins
  • 1/2 cup flour
  • 1 tbsp all-purpose seasoning
  • 2 eggs
  • 3 cups corn flakes (crushed)
  • Olive oil spray
  • 4 cloves garlic, minced
  • 1/2 lemon zested and 1 tablespoon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne or red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chives or green onions, sliced
  • 2 tablespoons fresh parsley minced
  • Kosher salt and pepper to taste

Instructions

  1. Crush cornflakes in a ziplock bag until coarse crumbs form.
  2. Prepare three shallow dishes: mix flour with seasoning in one, whisk eggs with milk in another, and place crushed cornflakes in the third.
  3. Bread each chicken tender by coating in flour, dipping into egg wash, then pressing into cornflakes.
  4. Preheat air fryer to 400°F. Cook tenders in batches for 10 minutes, flipping halfway through until golden brown.
  5. While cooking, mix sauce ingredients in a bowl. Toss cooked tenders in the sauce before serving.
