Ingredients
- 1 pound crab meat
- ½ cup crushed crackers (like Ritz)
- ⅓ cup mayonnaise
- 1 large egg
- 1 tsp Old Bay seasoning
- 1 tbsp fresh parsley
- ½ tsp Worcestershire sauce
- ½ tbsp lemon juice
- 6 egg roll wrappers
Instructions
- In a mixing bowl, whisk together mayonnaise, egg, Old Bay seasoning, lemon juice, parsley, and Worcestershire sauce until well blended. Fold in the crushed crackers and crab meat. Chill the mixture in the refrigerator for 15 minutes.
- Lay out egg roll wrappers on a cutting board at an angle. Brush water along the edges of each wrapper. Place approximately 3 ounces of the crab mixture in the center of each wrapper. Fold the closest point over the filling, tuck in both sides, and roll tightly while sealing the edges with water.
- Lightly spray each rolled egg roll with cooking spray and place them in an air fryer without overcrowding. Cook at 375°F for 10 to 12 minutes, flipping halfway through for even crispiness. Let them sit for about 5 minutes before serving.
