  • 2 tbsp chopped pickled jalapeños + 2 tbsp brine
  • 4 cups beef broth (or chicken broth)
  • 3 cups crushed tomatoes
  • 1 can kidney beans (drained and rinsed)
  • 5 ounces corn kernels
  • 2 tbsp chipotle sauce
  • ½ cup cream
  • 5 ounces cream cheese (at room temperature)
  • 5 ounces shredded cheddar cheese
  • Chopped cilantro and scallions for garnish

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and dicing the bell pepper.
  2. Heat olive oil and butter in a large pot over medium-high heat; sauté the bell pepper for about 3 minutes, then add onion and garlic for another 2 minutes.
  3. Add ground beef, breaking it up as it cooks until browned (about 3 minutes). Stir in jalapeños and brine with spices for an additional minute.
  4. Pour in the broth, bring to a boil, then add crushed tomatoes, kidney beans, and corn. Cover and simmer for about 5 minutes.
  5. Stir in chipotle sauce, cream, cream cheese, and cheddar until melted. Simmer for another 5 minutes before serving.
