  • 1 tbsp unsalted butter
  • 1 large green bell pepper (diced)
  • 1 red onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1.2 pounds ground beef (85% lean)
  • 2 tbsp chopped pickled jalapeños + 2 tbsp brine from jalapeños
  • 4 cups beef or chicken broth
  • 3 cups crushed tomatoes
  • 1 can kidney beans (drained and rinsed)
  • 5 ounces corn kernels
  • 2 tbsp chipotle sauce
  • ½ cup cream
  • 5 ounces cream cheese (at room temperature)
  • 5 ounces shredded cheddar
  • Salt and pepper to taste

Instructions

  1. Prepare all your ingredients: chop the red onion, mince the garlic, and dice the green bell pepper.
  2. Heat olive oil and butter in a large pot over medium-high heat. Add the diced bell pepper and cook for about 3 minutes until softened. Stir in the red onion and garlic; cook for another 2 minutes until fragrant.
  3. Add ground beef to the pot, breaking it up as it cooks until browned (about 3 minutes).
  4. Mix in spices (salt, pepper, cumin, coriander, smoked paprika, oregano), chopped jalapeños, and their brine; cook while stirring for an additional minute.
  5. Pour in your choice of broth followed by crushed tomatoes, kidney beans, and corn kernels. Bring to a boil, cover, reduce heat to medium-low, and let simmer for about 5 minutes.
  6. Stir in chipotle sauce, cream, cream cheese, and shredded cheddar until dissolved; bring back to a boil then let simmer for another 5 minutes.
