  • 1/2 medium onion (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can Rotel diced tomatoes with green chilies (with juices)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1 (12 ounce) can corn (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 cup heavy/whipping cream
  • 2 cups cooked chicken (I used a rotisserie chicken)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Sauté chopped onion until lightly browned (about 5–7 minutes).
  2. Add crushed tomatoes, diced tomatoes with green chilies, and chicken broth. Stir in garlic powder, smoked paprika, chili powder, corn, and black beans.
  3. Increase heat to high until boiling; then reduce heat and simmer uncovered for 5 minutes.
  4. While simmering, prep your toppings like avocado or tortilla strips.
  5. Stir in heavy cream and cooked chicken; warm through for an additional 3–5 minutes. Season with salt and pepper to taste.
  6. Serve immediately in bowls topped with your choice of toppings.
