Ingredients
- 4 strips turkey turkey bacon
- 1/2 medium onion (chopped)
- 3 sticks celery (chopped)
- 2 medium carrots (peeled & chopped)
- 2 cloves garlic (minced)
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups frozen or fresh corn
- 2 large Russet potatoes (peeled & diced)
- 1/4 teaspoon Italian seasoning
- Salt & pepper (to taste)
Instructions
- In a large pot over medium-high heat, cook the turkey turkey bacon until crispy (about 10 minutes). Remove and set aside.
- In the same pot, sauté the chopped onion, celery, and carrots in the leftover oil for about five minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds. Add flour and stir constantly for one minute.
- Gradually pour in chicken broth while stirring to dissolve the flour mixture.
- Mix in heavy cream, corn, diced potatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer with a slightly ajar lid for about 15-20 minutes until potatoes are tender.
- Adjust seasoning before serving hot, topped with reserved turkey turkey bacon.
