  • 4 strips turkey turkey bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups frozen or fresh corn
  • 2 large Russet potatoes (peeled & diced)
  • 1/4 teaspoon Italian seasoning
  • Salt & pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, cook the turkey turkey bacon until crispy (about 10 minutes). Remove and set aside.
  2. In the same pot, sauté the chopped onion, celery, and carrots in the leftover oil for about five minutes until softened.
  3. Stir in minced garlic and cook for an additional 30 seconds. Add flour and stir constantly for one minute.
  4. Gradually pour in chicken broth while stirring to dissolve the flour mixture.
  5. Mix in heavy cream, corn, diced potatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer with a slightly ajar lid for about 15-20 minutes until potatoes are tender.
  6. Adjust seasoning before serving hot, topped with reserved turkey turkey bacon.
