For the Chicken:

  • 4 boneless skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tbsp unsalted butter

  • Salt and pepper, to taste

  • ½ tsp paprika

  • 1 tsp dried Italian seasoning

For the Creamy Garlic Sauce:

  • 1 tbsp butter

  • 4 garlic cloves, minced

  • 1 ½ cups heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • 1 tsp fresh thyme or ½ tsp dried

  • 1 tbsp fresh parsley, chopped (plus more for garnish)

For the Herb Mashed Potatoes:

  • 2 lbs Yukon gold potatoes, peeled and cubed

  • 4 tbsp butter

  • ½ cup whole milk or heavy cream

  • 2 tbsp sour cream (optional, for tang)

  • 2 tbsp fresh chives or parsley, chopped

  • Salt and pepper, to taste


Instructions

Step 1: Cook the Mashed Potatoes
Place cubed potatoes in a pot and cover with cold water.
Add a generous pinch of salt and bring to a boil.
Cook for 15–18 minutes or until potatoes are fork-tender.
Drain well and return to pot.

Add butter, milk, sour cream (if using), herbs, salt, and pepper.
Mash until smooth and creamy. Cover and keep warm.

Step 2: Sear the Chicken
Pat chicken breasts dry and season both sides with salt, pepper, paprika, and Italian seasoning.
In a large skillet, heat olive oil and butter over medium-high heat.
Add chicken and sear 5–6 minutes per side, or until golden brown and cooked through (165°F internal temperature).
Transfer to a plate and cover loosely with foil.

Step 3: Make the Creamy Garlic Sauce
In the same skillet, reduce heat to medium. Add 1 tbsp butter and minced garlic.
Sauté for 1–2 minutes until fragrant but not browned.
Stir in heavy cream, chicken broth, thyme, and Parmesan cheese.
Simmer for 4–5 minutes until sauce thickens slightly. Season with salt and pepper to taste.

Step 4: Finish the Dish
Return the chicken to the skillet and spoon sauce over the top.
Simmer gently for 2–3 minutes to reheat the chicken and infuse with flavor.

Step 5: Serve It Up
Scoop a generous portion of mashed potatoes onto each plate.
Top with a chicken breast and spoon the creamy garlic sauce over everything.
Garnish with fresh parsley and serve hot.
