  • 1 pound elbow macaroni or cellentani pasta
  • 5 tablespoons butter (4 for the cheese sauce, 1 for cooking)
  • 16 oz lobster meat
  • 1 teaspoon Old Bay Seasoning
  • 3 tablespoons flour
  • 2 cups milk (adjust as needed)
  • 1 cup heavy cream
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded fontina cheese
  • 1/2 cup shredded parmigiano reggiano
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F.
  2. In a large pot of salted boiling water, cook the pasta until al dente. Drain and set aside.
  3. In a skillet, melt 1 tablespoon of butter over medium heat. Add lobster meat and Old Bay Seasoning; heat through and set aside.
  4. In the same pot used for pasta, melt remaining butter over medium heat. Whisk in flour for about one minute.
  5. Gradually add milk while whisking until smooth. Stir in heavy cream, onion powder, salt, and pepper; cook until thickened.
  6. Remove from heat and stir in cheddar, fontina, and parmigiano reggiano until melted.
  7. Combine pasta with cheese sauce; fold in lobster meat gently.
  8. Spray a baking dish with cooking spray and transfer the mixture into it.
  9. Bake for approximately 25-30 minutes or until bubbly and golden on top.
