  • 1/2 medium onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup finely shredded or grated Parmesan cheese
  • 1/2 cup sliced roasted red peppers, drained well
  • 1/2 cup sliced pepperoncini peppers, drained well
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Heat butter and olive oil in a large cast iron skillet over medium-high heat.
  2. Season chicken tenderloins with salt and pepper; add to the skillet. Cook until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  3. In the same skillet, sauté diced onion for 3 minutes, then add minced garlic and cook for an additional 2 minutes.
  4. Pour in chicken broth and reduce by half, then stir in heavy cream and Italian seasoning. Return the chicken to the skillet and simmer until cooked through.
  5. Add Parmesan cheese, roasted red peppers, pepperoncini peppers, and crushed red pepper flakes; stir until cheese melts.
