1 medium head cauliflower (cut into florets)

Instructions
Step 1: Steam the Cauliflower
Bring a pot of water to a boil and steam cauliflower florets for 7–10 minutes until very tender.
Drain well and let cool slightly. Pat dry with a towel to remove excess moisture.
Step 2: Mash or Process Cauliflower
Transfer cauliflower to a food processor and pulse until finely chopped but not pureed.
Alternatively, mash well by hand using a fork or potato masher.
Step 3: Mix the Patty Ingredients
In a large bowl, combine chopped cauliflower, breadcrumbs, Parmesan, green onions, garlic, eggs, parsley, salt, pepper, and paprika or cumin (if using).
Mix until the mixture holds together—if too wet, add extra breadcrumbs 1 tbsp at a time.
Step 4: Form the Patties
Use your hands to shape the mixture into small patties, about ½ inch thick.
Place them on a tray or plate as you go.
Step 5: Pan-Fry Until Crispy
Heat a thin layer of oil in a non-stick skillet over medium heat.
Cook patties in batches for 3–4 minutes per side until golden brown and crispy.
Transfer to a plate lined with paper towels to drain excess oil.
Step 6: Serve Hot
Serve warm with your favorite dip or sauce and a sprinkle of herbs.
