For the Filling:

  • 1 cup cottage cheese (small curd, well-drained)

  • 1 large egg

  • ¼ cup shredded mozzarella or cheddar cheese

  • 2 tbsp chopped green onions or chives

  • 2 tbsp all-purpose flour (or almond flour for gluten-free)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp salt

  • ¼ tsp black pepper

For the Coating:

  • ½ cup breadcrumbs or panko

  • 2 tbsp grated Parmesan cheese (optional)

  • 1 egg, beaten (for dredging)

  • ¼ cup flour (for dredging)

For Frying or Air-Frying:

  • Oil for shallow frying (olive or vegetable oil)

  • Cooking spray (for air fryer)


Instructions

Step 1: Prepare the Filling

  1. Place cottage cheese in a sieve or cheesecloth and press out excess moisture.

  2. In a mixing bowl, combine drained cottage cheese, shredded cheese, egg, green onions, flour, garlic powder, onion powder, salt, and pepper.

  3. Mix until fully combined and slightly sticky.

Step 2: Shape the Delights
4. Scoop about 1½ tablespoons of the mixture and shape into small patties or nuggets.
5. Place on a tray and chill in the fridge for 10–15 minutes to firm up.

Step 3: Dredge the Patties
6. Set up three bowls: one with flour, one with beaten egg, and one with breadcrumbs mixed with Parmesan.
7. Dredge each patty in flour, dip in egg, then coat with breadcrumbs.
8. Set aside on a plate until all are coated.

Step 4: Cook Until Crispy
For Pan-Frying:
9. Heat a thin layer of oil in a nonstick skillet over medium heat.
10. Add patties and cook 2–3 minutes per side until golden brown and crisp.
11. Transfer to a paper towel-lined plate to drain.

For Air-Frying:
12. Preheat air fryer to 375°F. Spray basket with oil.
13. Place patties in a single layer. Spray tops lightly with oil.
14. Cook for 10–12 minutes, flipping halfway, until crisp and golden.

Step 5: Serve & Enjoy
15. Serve warm with dipping sauces like ranch, marinara, or a yogurt-herb dip.

Notes

Drain Well – Remove as much moisture as possible to prevent sogginess.
Chill Before Cooking – Helps hold their shape when frying or air-frying.
Use Fine Breadcrumbs – For a smoother, crispier coating.
Add Herbs – Fresh dill, basil, or parsley can boost flavor.
