Ingredients
- 1 tbsp vegetable oil
- 1 ½ lbs boneless chuck roast, sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- ½ cup low-sodium soy sauce
- 3 tbsp light brown sugar
- 1 ½ cups matchstick carrots
- 2 scallions, sliced
- 3 cups low-sodium beef broth
- 1 lb broccoli florets
- 2 packages dry ramen noodles (discard seasoning packets)
Instructions
- In a large sauté pan, heat oil over medium heat. Brown the beef slices in batches for about 5 to 7 minutes until browned on all sides. Transfer to a plate.
- In a small bowl, whisk together garlic, ginger, soy sauce, and brown sugar until combined.
- In a slow cooker, combine the browned beef, carrots, and most of the scallions. Pour the broth and sauce mixture over.
- Cover and cook on LOW for 5 hours. Afterward, stir in broccoli and a mixture of cornstarch and water.
- Nestle ramen into the pot and cook for an additional 30 minutes until heated through. Serve topped with remaining scallions.
