Ingredients

Scale

For the Ranch Chicken:

  • 2 lbs boneless, skinless chicken breasts (or thighs)

  • 1 packet ranch seasoning mix (1 oz)

  • 1 block (8 oz) cream cheese, cubed

  • ½ cup low-sodium chicken broth

  • 1 cup shredded cheddar cheese

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp black pepper

For Serving:

  • Sandwich buns, slider rolls, or hoagie rolls

  • Optional toppings: sliced pickles, crispy bacon, shredded lettuce, red onion slices

Instructions

Step 1: Load the Crock-Pot

  1. Place chicken breasts in the bottom of the slow cooker.

  2. Sprinkle ranch seasoning, garlic powder, onion powder, and black pepper over the top.

  3. Add cubed cream cheese and pour in chicken broth.

Step 2: Slow Cook the Chicken
4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender.

Step 3: Shred & Mix
5. Shred the chicken using two forks directly in the slow cooker.
6. Stir the mixture thoroughly to combine chicken, melted cream cheese, and seasonings into a creamy filling.

Step 4: Add the Cheese
7. Stir in shredded cheddar cheese until melted and fully incorporated.
8. Taste and adjust seasoning if needed.

Step 5: Serve the Sandwiches
9. Scoop the creamy ranch chicken onto buns or rolls.
10. Add optional toppings like crispy bacon, pickles, or lettuce for extra flavor and crunch.

Notes

Use Thighs for Extra Juiciness – Chicken thighs stay moist and flavorful.
Low and Slow = Best Texture – Longer cooking time gives the most tender chicken.
Add Bacon – Crumbled bacon takes the flavor over the top.
Toast the Buns – Lightly toasting adds structure and keeps sandwiches from getting soggy.
Customize It – Add hot sauce, jalapeños, or a slice of tomato for your own spin.
