  • 1 large onion (diced)
  • 5 garlic cloves (minced)
  • 2 lb chuck roast (cut into 4 pieces)
  • 1 can (28 oz) crushed tomatoes
  • 1/4 cup red grape juice
  • 1.5 cups beef broth
  • 3 tbsp tomato paste
  • Fresh thyme and bay leaves
  • Pappardelle noodles (16 oz)

Instructions

  1. Prepare the ingredients by dicing onions and mincing garlic. Add them to the crockpot with olive oil on high.
  2. Season the chuck roast with salt and pepper, then place on top of the onions.
  3. Pour in crushed tomatoes, grape juice, and beef broth over the roast. Add tomato paste, thyme sprigs, and bay leaves.
  4. Cover and cook on low for 6 hours until the beef is tender.
  5. Shred the beef using two forks within the sauce and set to warm.
  6. Cook pappardelle noodles according to package instructions.
  7. Serve pasta topped with ragu; garnish with parmesan cheese and fresh thyme.
