  • 3 boneless chicken breasts
  • 1 tablespoon minced garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken broth
  • 1 cup freshly shaved parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz uncooked rotini pasta
  • 1½ cups shredded mozzarella

Instructions

  1. Prepare the chicken by cutting it into manageable pieces and mincing the garlic.
  2. In the crockpot, combine chicken, garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth. Stir well.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
  4. Shred cooked chicken using forks and return to the pot.
  5. Stir in parmesan cheese, heavy cream, and uncooked rotini pasta. Cover and cook on low for an additional 30 minutes or high for about 15 minutes until pasta is done.
  6. Sauté breadcrumbs in butter until golden brown for garnish.
  7. Serve hot with mozzarella cheese and sautéed breadcrumbs on top.
