Description

CrockPot Chicken Tortellini is the ultimate comfort food that combines convenience with delightful flavors. This creamy dish features tender chicken, cheesy tortellini, and a rich marinara sauce, making it perfect for busy weeknights or cozy gatherings.

  • Olive oil spray
  • 1 1/2 lb chicken breast
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red chili flakes
  • 1 1/2 cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup heavy cream
  • 2 cups baby spinach
  • 1/3 cup Parmesan cheese (grated)

Instructions

  1. Spray the slow cooker with olive oil to prevent sticking.
  2. Layer the chicken breasts at the bottom of the slow cooker.
  3. Add marinara sauce, garlic powder, onion granules, Italian seasoning mix, paprika, red chili flakes, and chicken broth over the chicken.
  4. Cover and cook on LOW for 4 hours until the chicken reaches an internal temperature of 165°F.
  5. Shred the cooked chicken using two forks and return it to the slow cooker.
  6. Stir in cheese tortellini, mozzarella cheese, and heavy cream until well mixed.
  7. Cover and cook on LOW for an additional 30 minutes until tortellini are tender.
  8. Mix in baby spinach and cook for another 10 minutes until wilted.
  9. Stir in grated Parmesan cheese before serving.
