Ingredients

Scale

For the Pie:

  • 4 large croissants, torn into chunks

  • 6 large eggs

  • 1 cup whole milk

  • ½ cup heavy cream

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella or Swiss cheese

  • 1 cup cooked breakfast sausage or diced chicken (optional)

  • ½ cup sautéed mushrooms or spinach (optional)

  • ¼ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

Optional Toppings:

  • Chopped chives or parsley

  • Red pepper flakes

  • A sprinkle of Parmesan cheese

Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Lightly grease your pie dish or baking dish.

Step 2: Prepare the Croissants
Tear croissants into bite-sized pieces and arrange them evenly in the bottom of the dish.
If using day-old croissants, they’ll soak up the custard beautifully.

Step 3: Cook Any Add-Ins
Brown sausage or cook diced chicken if using.
Sauté veggies like mushrooms or spinach if desired.
Let cool slightly before adding to the pie.

Step 4: Make the Egg Mixture
In a mixing bowl, whisk together eggs, milk, heavy cream, garlic powder, salt, and pepper.
Stir in the shredded cheeses and any cooked meat or veggies.

Step 5: Assemble the Breakfast Pie
Pour the egg mixture evenly over the croissant pieces in the dish.
Press gently with a spoon to help the croissants soak up the custard.
Let sit for 10–15 minutes (or refrigerate overnight for stronger flavor and convenience).

Step 6: Bake
Bake for 35–40 minutes, or until the top is golden and the center is set.
Insert a knife in the center—it should come out clean.
If the top browns too quickly, tent with foil halfway through.

Step 7: Rest and Serve
Let the pie cool for 10 minutes before slicing.
Garnish with fresh herbs or extra cheese and serve warm.

Notes

Use Quality Croissants – Fresh or day-old work best for flavor and structure.
Customize the Fillings – Add your favorite breakfast meats or seasonal vegetables.
Make It Ahead – Assemble the night before and refrigerate until baking.
Don’t Overbake – The center should be just set to keep it creamy.
Use a Shallow Dish – For the perfect egg-to-croissant ratio.
