Ingredients

For the Sandwiches:
1 English cucumber, thinly sliced
1 loaf soft white or wheat sandwich bread, crusts removed
4 oz cream cheese, softened
2 tbsp mayonnaise or Greek yogurt
1 tbsp fresh dill, chopped
1 tbsp fresh chives or parsley, chopped
1 tsp lemon juice
¼ tsp garlic powder
Salt and pepper to taste

Optional Add-Ins:
Thinly sliced radishes
Sprouts or microgreens
Crumbled feta or goat cheese
Smoked salmon slices
Paprika or everything bagel seasoning


Instructions

Step 1: Prepare the Cucumber
Thinly slice the cucumber using a sharp knife or mandoline.
Lay slices on paper towels and lightly sprinkle with salt. Let sit for 10 minutes to release moisture, then pat dry.

Step 2: Make the Creamy Spread
In a mixing bowl, combine softened cream cheese, mayonnaise or yogurt, lemon juice, garlic powder, dill, chives, salt, and pepper.
Mix until smooth and fluffy.

Step 3: Assemble the Sandwiches
Spread a thin, even layer of the cream cheese mixture onto each slice of bread.
Layer cucumber slices on half the bread slices.
Top with another bread slice, spread-side down. Press gently.

Step 4: Trim and Cut
Remove crusts (if not already removed) for clean edges.
Cut sandwiches into quarters, triangles, or use cookie cutters for fun shapes.

 

Step 5: Chill and Serve
Place sandwiches on a tray, cover with plastic wrap, and refrigerate for at least 30 minutes before serving.
Garnish with extra dill or cucumber slices for presentation.

Use English Cucumbers – They’re less watery and have thinner skin.
Dry Cucumbers Well – Prevents soggy sandwiches.
