- 4 large baking potatoes

- 1 small onion, chopped
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 cup sour cream (plus extra for serving)
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1/2 cup salsa
Instructions
- Preheat oven to 475°F. Scrub potatoes and prick with a fork.
- Bake potatoes on the rack or a baking sheet for 60-75 minutes until soft.
- In a nonstick pan over medium heat, cook ground beef and onion until browned; add taco seasoning and water, cooking for an additional minute.
- After cooling, scoop out potato flesh into a bowl; mix in sour cream and milk until smooth.
- Combine three-quarters of the beef mixture and cheese into the mashed potatoes; spoon back into potato skins.
