  • 1 lb boneless skinless chicken breast or thighs (diced)
  • 1 cup uncooked long grain white rice
  • 2 cups chicken broth
  • 1 medium zucchini (grated)
  • Fresh herbs: parsley, oregano, thyme
  • Spices: smoked paprika, cumin, turmeric

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In the prepared dish, combine diced chicken with lemon juice, olive oil, parsley, oregano, thyme, smoked paprika, seasoned salt, cumin, onion powder, garlic powder, black pepper, turmeric, and cayenne pepper. Mix well and let marinate at room temperature for 30 minutes.
  3. Once marinated, add uncooked rice and grated zucchini to the dish along with chicken broth. Stir until combined.
  4. Cover tightly with aluminum foil and bake for 45-50 minutes (metal pans) or 50-60 minutes (glass/ceramic pans). Check for doneness; rice should be tender.
