  • 23 tablespoons maple syrup (or sugar-free syrup)
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F and lightly grease an 8×8” baking dish.
  2. Blend rolled oats in a blender until they reach a fine flour consistency.
  3. In a blender or mixing bowl, combine cottage cheese, eggs, maple syrup, vanilla extract, lemon juice, and protein powder; blend until smooth.
  4. Stir in the oat flour, cinnamon, baking powder, and optional salt until well combined.
  5. Gently fold in blueberries without overmixing.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for about 35–40 minutes until golden brown and set in the center.
