Ingredients
- 1 tablespoon olive oil
- 1 cup diced onion
- 1 cup shredded carrot
- 1 cup diced celery
- 1 pound lean ground beef
- 1 tablespoon Italian seasoning
- ½ teaspoon dried garlic powder
- Salt & pepper to taste
- 1 (15-oz) can tomato sauce
- 1 (15-oz) can diced tomatoes (undrained)
- 2 (16-oz) packages gnocchi
- ½ cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F and lightly grease a 9×13 inch casserole dish.
- In a large skillet over medium heat, heat the olive oil and sauté the onion, carrot, and celery until softened (4-5 minutes).
- Add the ground beef along with Italian seasoning, garlic powder, salt, and pepper. Cook until browned and crumbly.
- Stir in both cans of tomatoes and the gnocchi, mixing well before spreading into the prepared casserole dish.
- Top with grated parmesan cheese followed by shredded mozzarella cheese.
