  • 1 1/2 cups brown rice
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons grass-fed butter or ghee
  • 3 cups chicken bone broth
  • Fresh cilantro or parsley, chopped
  • 1 Tbsp smoked paprika
  • 1 tsp fine sea salt
  • 1/2 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper

Instructions

  1. Rinse the brown rice under cold water until it runs clear; drain well.
  2. Pat the shrimp dry with paper towels for better searing.
  3. Whisk together all Cajun seasonings in a small bowl.
  4. In a large skillet over medium heat, melt 2 tablespoons of butter and cook shrimp until pink (about 2 minutes per side). Set aside.
  5. Add remaining butter to the skillet with rinsed rice and half of the seasoning blend; toast for 1 minute.
  6. Stir in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 22-25 minutes.
  7. Once rice is tender, fold in cooked shrimp and chopped herbs before serving.
