Ingredients

  • 1 tbsp butter
  • 1 lb gnocchi
  • 1 lb lean ground beef
  • Salt & pepper (to taste)
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp yellow mustard
  • 1 large white onion (diced)
  • 4 tsp minced garlic
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup beef broth
  • Scant 1/3 cup cream
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 bunch green onions (sliced)

Instructions

  1. In a large skillet over medium heat, melt butter and toast the gnocchi until golden brown on both sides. Set aside.
  2. Increase heat and cook ground beef and diced onion until browned, seasoning with salt, pepper, cumin, smoked paprika, yellow mustard, and garlic.
  3. Stir in diced tomatoes, beef broth, and toasted gnocchi; bring to a boil before reducing to simmer.
  4. Cover and cook for about 5-7 minutes until gnocchi are fully cooked.
  5. Stir in cream and three-quarters of the cheese until melted.
  6. Top with remaining cheese and half of the green onions; broil until cheese is bubbly and golden.
  7. Serve topped with remaining green onions.
