Ingredients
- 1 tbsp butter
- 1 lb gnocchi
- 1 lb lean ground beef
- Salt & pepper (to taste)
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1 tbsp yellow mustard
- 1 large white onion (diced)
- 4 tsp minced garlic
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup beef broth
- Scant 1/3 cup cream
- 1 1/2 cups shredded sharp cheddar cheese
- 1 bunch green onions (sliced)
Instructions
- In a large skillet over medium heat, melt butter and toast the gnocchi until golden brown on both sides. Set aside.
- Increase heat and cook ground beef and diced onion until browned, seasoning with salt, pepper, cumin, smoked paprika, yellow mustard, and garlic.
- Stir in diced tomatoes, beef broth, and toasted gnocchi; bring to a boil before reducing to simmer.
- Cover and cook for about 5-7 minutes until gnocchi are fully cooked.
- Stir in cream and three-quarters of the cheese until melted.
- Top with remaining cheese and half of the green onions; broil until cheese is bubbly and golden.
- Serve topped with remaining green onions.
