- White or whole wheat pita bread

- Juice of one lemon
- 1 teaspoon salt
- ¼ teaspoon cracked black pepper
- ½ teaspoon crushed red pepper flakes
- 1 tablespoon minced garlic
- ½ teaspoon garlic powder
- 1 tablespoon Herbs de Provence (or Italian seasoning)
- ½ cucumber (sliced or chopped)
- ½ cup cherry tomatoes (halved)
- ¼ red onion (thinly sliced)
- 1 tablespoon freshly squeezed lemon juice
- Salt and pepper (to taste)
- Pinch of fresh dill (optional)
Instructions
- Prepare the marinade by mixing olive oil, lemon juice, salt, pepper, red pepper flakes, garlic, and herbs in a bowl. Add chicken tenderloins and marinate for at least 30 minutes.
- While the chicken marinates, make the cucumber salad by combining sliced cucumbers, cherry tomatoes, red onion, lemon juice, salt, and pepper in another bowl.
